Holiday Treats with Pinterest!

With Christmas a week away, I need to get a move on with the yummy food. There are a couple of these that we will be trying on Wednesday since it’s my cheat day. We’ve already made the faux thin mints and they are PERFECT! I can’t wait to try more items from this list!

Pinterest Food

Black Bean and Corn Salad

So I found this recipe on Pinterest(This is my new favorite website!) and wanted to try it. Ever since my first Chipotle run, I have been addicted to black beans. They are delicious and good for you. So here is the recipe.

Ingredients-
About a cup of Tomato
About half a cup of Red Bell Pepper
One Can of Black Beans
One Can Corn
Two Medium to Large Avocado

I encourage you, if you can to use dried beans and fresh corn. It always healthier for you! All you do is chop everything up and mix it together. It’s so simple and this is your final result!

I could eat this forever! It tastes so good. For this recipe, even though it can do without, I like to add some Light Balsamic Vinaigrette. The second time I made it I added Cilantro and Lime juice and it was perfect with out the Vinaigrette. Another Bonus is that the kids adored the recipe and its pretty healthy! It’s awesome for a snack or two cups for a meal! It made about 4 cups for me, so it’s about a cup a person.

Banana Chocolate Chip Muffins

When I found a recipe for Blueberry Banana muffins I decided to try it. I mean the kids LOVE blueberries and banana’s so why wouldn’t they like  them in muffin form?! Well it turned out that the blueberries were a little to sour tasting compared to the rest of the muffins. So on the next batch I decided to try some Banana Chocolate Chip muffins with the same recipe. Although I did tweak a couple things.


(Just an FYI- I used Enjoy Life baking semi sweet chocolate chips to make the recipe peanut and tree nut free.)

So there you have it! These are very delicious. The batter for us has made 24 muffins. Also with the ingredients I used they came out to about 172 calories per muffin which made them great for snacks! The kids loved them and they were so easy to make. We will defiantly be making more in the near future!

Biscuits and Gravy

I am not a morning person. So generally our breakfast is oatmeal, cereal or premade waffles. I know it isn’t the best but it works for us. Anyway there are rare occasions when I get in the mood to cook a full breakfast. One of our favorite breakfast meals is Buscuits and Gravy. A friend had made them while we stayed in Wisconsin for a week. They were DELICIOUS! When we got back Chris asked me multiple times to make them but I had no clue how to. My grandma gave me a simple recipe.

What you will need-

  • Sausage Roll
  • Buscuits(We use the premade ones)
  • Flour
  • Milk
  • Salt and Pepper

It is so simple. Start by browning the sausage and preheating the oven. A minute or two before you start the gravy making process start your biscuits.

Next you will need a tablespoon and milk. Add one table spoon of flour and wait for it to brown completely before adding another. Add a minimum of four but no more than six.

Next you add your milk. Anywhere between two and four cups.

TIP:This is my flour to milk ratio. 4tbsp. =2 cups of milk, 5tbsp. =3c. milk, 6tbsp. =4c. milk. If you want thicker gravy use less milk. Thinner gravy more milk. But make sure you use at least 4tbsp.

Once you add your milk, stir until thickened. Salt and pepper to taste. When the biscuits are done come out cut them in half or if you got the flaky ones just pull them apart. Cool and serve!
